An eco-resort, a destination that endeavors to minimize its footprint on the environment, should equally have an eco-policy informing its menu. At Rancho Encantado, exquisitely situated on the shores of Laguna Bacalar in the barely impacted Southern Yucatan, this policy is in the capable culinary hands of Julia Chay.


Julia, a joyfully simmering cauldron herself, creates traditional and uncommon fare using only the natural and local foods available in this southeastern corner of Mexico. From classic nachos to a scrumptious chicken salad with jicama, served in a coconut shell harvested from the property’s trees the same morning, the food is always fresh and inviting.


“Me encanta cocinar”, Julia declares. “I love cooking, it makes people so happy.”
